Solstice is located at our St. Paul’s Riverside location – an urban sanctuary in the City of London. Take a break from your busy schedule and dine with beautiful views of the Thames. Our seasonal dishes are inspired by the British coastline – we use only quality ingredients sourced directly from farmers, and prioritise organic ingredients where possible.
Meet Chef Jay, our head chef at Solstice who comes to us with 9 years of experience working in top spots around London. Starting at the Dorchester hotel, and moving on to Chef Michael White’s restaurant, and most recently, a gastropub in southwest London – his experiences have inspired him to create a menu where coastal delicacies from the British Isles take centre stage.
Chef Jay describes his dishes as small plates to share amongst family and friends. Some dishes most people will be familiar with, others they won’t be, but hopefully are still willing to discover. He is heavily influenced by the Mediterranean cuisine, particularly Spain, where he frequented as a child.
At Solstice, Chef Jay works with some of the best suppliers in the southern and the south-east British coast to create simple and fresh plates, where the quality of the produce used can shine through.
